Homemade Pumpkin Pie

This isn’t just dessert; it’s a ritual, a comfort, a memory baked into buttery crust and silky, spiced pumpkin filling.

Imagine pulling a golden pie from the oven, the aroma of cinnamon, nutmeg, and cloves filling your kitchen. Ingredients:

For the crust:

  • 1 ¼ cups all-purpose flour

  • ½ tsp salt

  • ½ cup unsalted butter, cold and cubed

  • 3–4 tbsp ice water

For the filling:

  • 1 can (15 oz) pumpkin puree (or 2 cups fresh roasted pumpkin)

  • ¾ cup brown sugar

  • 2 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp cloves

  • ¼ tsp ginger

  • ½ tsp salt

  • 2 large eggs

  • 1 cup heavy cream or evaporated milk

Instructions:

  1. Make the crust:
    Mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Slowly add ice water until dough comes together. Chill for 30 minutes. Roll out and fit into a 9-inch pie pan. Crimp edges for that homemade look.

  2. Prepare the filling:
    In a bowl, whisk pumpkin, brown sugar, spices, and salt. Beat in eggs, then stir in cream until smooth. Don’t skip the spices—they’re the soul of fall.

  3. Assemble:
    Pour filling into crust. Smooth the top. Optional: sprinkle a little extra cinnamon on top for the final touch.

  4. Bake:
    Preheat oven to 350°F (175°C). Bake 50–60 minutes, until the filling is set but slightly jiggly in the center. Let it cool completely—this is where it firms up and develops that signature texture.

  5. Serve:
